Fromagerie Rouzaire is a family-owned business that produces a range of artisanal bloomy rind cheeses in the Seine-et-Marne region, near Paris. It is a family business for three generations, using traditional production methods.To ensure high-quality cheese, they work directly with 24 regional dairy farmers located within a 50-kilometer radius. They have a site entirely dedicated to aging: a drying room, underground cellars, and manual turning by a cellar master.
After two weeks of aging in underground cellars, Brie Rouzaire is cut horizontally in half and spread with a mixture of mascarpone, cream, and Grand Marnier liqueur before aging for an additional two weeks.
