Moelleux are produced by Fruitière d’Arinthod, a cooperative of 21 producers located in the Haut-Jura Regional Natural Park and established in 1930. This soft, washed-rind cheese, enriched with cream, offers a melting, velvety texture and comes in a square format inspired by Taleggio.
In recent years, Lionel Martin has developped a range of local ingredients : black truffle and black garlic. Both sourced from regional producers, these additions allow the classic Moelleux to be generously filled at its center with black truffle, delivering delicate woody aromas.
